Fruit Custard


I used to prepare this recipe always due to it's nutritional values

Ingredients:(serving measure for two people)

Apple - 1/2
Pear - 1/2
Grapes - 1/2 a handfull
Banana - 1
Honey - one tablespoon
(Any fruit can be added to prepare fruit custard. I even add cherries, strawberries,blackberries and peaches)
custard powder - two tablespoons
sugar - required quantity
Milk(Low fat or 2% milk) - one cup
powdered almonds - one tablespoon

Preparation:
heat one cup of milk and allow it to boil. Mix custard powder with required milk separately and keep aside. If the milk starts to boil, add the custard milk mixture and required sugar to boiling milk and stir till the consistency becomes thick. maintain in low flame as high flame tends to burn and change the taste of custard. After the custard becomes thick turn off the flame and allow the consistancy to cool. Keep this custard mixture in refrigerator for about one and half hours. In the meantime, cut the fruits and mix them with honey. Whenever you are going to serve fruit custard,mix the honey fruit mixture with chilled custard and serve cool. If needed,add powdered almonds with custard mixture.

Carrot pulav




Ingredients:

Basmati Rice - 1 1/2 cups
Carrots - 3(shredded)
Curry leaves - required amt.
Salt - As required
Clarified butter(ghee) - two tablespoons
Ginger - 1/2 inch piece
uradh dhal - one tablespoon
turmeric powder - a pinch
Spices to be added:
corriander seeds - one tablespoon
cumin seeds - one tablespoon
cloves - 4
dried red chillies - 4
fresh shredded coconut - one tablespoon
fry the above ingredients,powder them well and keep it aside
Raitha:
Cucumber - 1/2
yoghurt - two cups
salt - as required
Preparation:
Cook basmati rice with water in 1:2 proportions. Add a small piece of butter while pressure cooking basmati rice. Microwave carrots for 3 mins till they become little tender. Shred the carrots well and keep it aside.

In a fry pan, add one tablespoon of ghee and add mustard seeds,turmeric powder,curry leaves one teaspoon of urad dhal,cut ginger pieces. fry for a minute and add the powdered spice. Again fry them for few seconds and add shredded carrots and salt. Fry till the raw smell of carrots diminishes. Then add cooked basmati rice and stir well. If needed,after cooking basmati rice, a tablespoon of ghee can be added to plain rice. Good to eat with raitha and rice papad.
